Packed with fresh zucchini, savory D'Orsogna Champagne Leg Ham, and melty cheese, these Lunchbox Zucchini Muffins are the perfect grab-and-go snack. Quick to whip up and deliciously moist, they’re a family-friendly favorite—ideal for lunchboxes or an easy snack.
Ingredients
- 2 eggs
- 1/2 cup vegetable oil
- 1 medium Brown Onion - diced
- 3/4 cup D'orsogna Champagne leg Ham
- 1 cup of Tasty cheese - grated
- 2 Zucchini - grated
- 1 cup Self-raising flour
Instructions
- Preheat the oven to 200°C fan-forced. In a large bowl, beat the eggs until combined. Add the vegetable oil and whisk until emulsified.
- Stir in the D’Orsogna Champagne Leg Ham, diced onion, grated zucchini, and grated cheese.
- Gently fold in the self-raising flour until just combined—avoid overmixing.
- Generously spray a 12-cup muffin tray with olive oil. Evenly divide the mixture between the muffin cups using two tablespoons or an ice cream scoop.
- Bake for 20-22 minutes, or until the muffins are golden and a toothpick inserted in the center comes out clean.
- Allow to cool slightly before removing from the tray. Enjoy warm or pack for later!
