LUNCHBOX ZUCCHINI MUFFINS

Packed with fresh zucchini, savory D'Orsogna Champagne Leg Ham, and melty cheese, these Lunchbox Zucchini Muffins are the perfect grab-and-go snack. Quick to whip up and deliciously moist, they’re a family-friendly favorite—ideal for lunchboxes or an easy snack.

Ingredients

  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 medium Brown Onion - diced
  • 3/4 cup D'orsogna Champagne leg Ham
  • 1 cup of Tasty cheese - grated
  • 2 Zucchini - grated
  • 1 cup Self-raising flour

Instructions

  1. Preheat the oven to 200°C fan-forced. In a large bowl, beat the eggs until combined. Add the vegetable oil and whisk until emulsified.
  2. Stir in the D’Orsogna Champagne Leg Ham, diced onion, grated zucchini, and grated cheese.
  3. Gently fold in the self-raising flour until just combined—avoid overmixing.
  4. Generously spray a 12-cup muffin tray with olive oil. Evenly divide the mixture between the muffin cups using two tablespoons or an ice cream scoop.
  5. Bake for 20-22 minutes, or until the muffins are golden and a toothpick inserted in the center comes out clean.
  6. Allow to cool slightly before removing from the tray. Enjoy warm or pack for later!
