CINNAMON SCROLLS WITH CRUMBLE & MAPLE GLAZE

Indulge in these heavenly Apple Cinnamon Scrolls - soft, fluffy swirls filled with spiced cinnamon buttercream, juicy apples, and sweet raisins. Topped with a golden apple crumble and drizzled with a luscious maple glaze, they’re the perfect treat for breakfast or dessert. Made easy with RDM Pizza Dough, these scrolls are as simple as they are irresistible!

Ingredients

Cinnamon Buttercream Filling
  • 200g unsalted butter, softened
  • 1/4 cup (50g) brown sugar
  • 1 tablespoon ground cinnamon
  • 150g raisins
  • Tinned apples, chopped (for easy filling)
Dough
  • 2 RDM pizza dough balls
Apple Crumble Topping
  • 30g all-purpose flour
  • 30g unsalted butter, softened
  • 30g rolled oats
  • 30g brown sugar
Maple Glaze
  • 2 cups (250g) icing sugar, sifted
  • 1 teaspoon maple syrup
  • 2 tablespoons full-cream milk
  • 2 tablespoons cream
  • ½ teaspoon vanilla bean paste

Instructions

Prepare the Cinnamon Buttercream Filling:
  1. In the bowl of an electric mixer fitted with a paddle attachment, beat the softened butter, brown sugar, and cinnamon on medium speed for 1-2 minutes until light and fluffy. Set aside.
Make the Apple Crumble Topping
  1. In a bowl, combine the flour, butter, oats, and brown sugar. Rub the mixture between your fingers until it resembles coarse crumbs. Set aside.
Roll Out and Fill the Dough
  1. Lightly flour your work surface. Roll the two RDM pizza dough balls together into a rectangle (approximately 30 x 35 cm).
  2. Spread an even layer of the cinnamon buttercream over the dough. Sprinkle with raisins and chopped tinned apples.
  3. Carefully roll the dough into a tight log shape. Using a sharp knife, slice the log into 12 equal pieces (2-3 cm wide).
Arrange for Baking
  1. Grease a muffin tin. Place each scroll cut-side up into the prepared muffin tin.
  2. Preheat your oven to 175°C (347°F).
  3. Sprinkle the apple crumble mixture evenly over the tops of the scrolls.
Bake the Scrolls:
  1. Bake in the preheated oven for 20-25 minutes, or until the scrolls are golden brown and cooked through.
Prepare the Maple Glaze:
  1. In the bowl of an electric mixer fitted with a paddle attachment, combine the icing sugar, maple syrup, milk, cream, and vanilla bean paste.
  2. Mix on high speed for 3 minutes until smooth and glossy. Cover with plastic wrap to prevent skin from forming.
Finish and Serve
  1. Allow the scrolls to cool slightly before drizzling generously with the maple glaze. Serve warm and enjoy!
