SPAGHETTI WITH SPICY VODKA SAUCE

METHOD
Boil pasta in heavily salted water until al dente
In a separate large pan, melt the butter and add onions and garlic and sweat down until translucent.
Add vodka to pan and simmer until reduced.
Add chilli paste and tomatoes and stir well.
Add cream and bring to the boil and cook for 5 minutes.
Add cooked pasta to sauce and cook for a further 5 mins
Serve with shaved parmesan
