Haloumi Burger with Bacon

Get ready for a burger that seriously delivers. This Haloumi Burger with Bacon & All the Rest is a crispy, salty, creamy stack of joy featuring golden-fried Riverina Dairy Co. haloumi, smoky streaky bacon, a perfectly cooked egg, and all your favourite fixings—tucked into a buttery brioche bun. It’s the ultimate “burger to go” that’ll have you coming back for seconds (and maybe thirds).

Ingredients

  • 4 eggs
  • Extra virgin olive oil
  • 400g Riverina Dairy Co. haloumi, cut into thick slices
  • 8 slices streaky bacon, rind off
  • 4 brioche buns, split and toasted
  • 1 head baby cos, leaves separated
  • 1 large tomato, thinly sliced
  • 2 dill pickles, thickly sliced
  • 3 tbs hummus

Instructions

  1. Heat a large non-stick frying pan over medium heat.
  2. Add a little oil and gently fry eggs to a degree that makes you happy then remove them from the pan.
  3. Next, cook the bacon over medium-high until crispy and golden.
  4. Drain on paper towel (Chux), then add the haloumi and cook until golden crust forms, this may take 3-4 minutes.
  5. Flip over and cook for a further 2-3 minutes.
  6. Warm the burger buns, then place the cheese on the base and layer up with bacon, egg, tomato, pickles, lettuce and hummus.
