Get ready for a burger that seriously delivers. This Haloumi Burger with Bacon & All the Rest is a crispy, salty, creamy stack of joy featuring golden-fried Riverina Dairy Co. haloumi, smoky streaky bacon, a perfectly cooked egg, and all your favourite fixings—tucked into a buttery brioche bun. It’s the ultimate “burger to go” that’ll have you coming back for seconds (and maybe thirds).
Ingredients
- 4 eggs
- Extra virgin olive oil
- 400g Riverina Dairy Co. haloumi, cut into thick slices
- 8 slices streaky bacon, rind off
- 4 brioche buns, split and toasted
- 1 head baby cos, leaves separated
- 1 large tomato, thinly sliced
- 2 dill pickles, thickly sliced
- 3 tbs hummus
Instructions
- Heat a large non-stick frying pan over medium heat.
- Add a little oil and gently fry eggs to a degree that makes you happy then remove them from the pan.
- Next, cook the bacon over medium-high until crispy and golden.
- Drain on paper towel (Chux), then add the haloumi and cook until golden crust forms, this may take 3-4 minutes.
- Flip over and cook for a further 2-3 minutes.
- Warm the burger buns, then place the cheese on the base and layer up with bacon, egg, tomato, pickles, lettuce and hummus.
